We were thrilled to have ABC’s Lori Corbin come and visit us this morning at Coast Packing Co. for a segment on cooking with healthy, natural animal fats.
Chef Miller was interviewed and provided a few tasty plates: Tallow roasted kohlrabi w/ fermented giardiniara, sunflower seeds and Parmesan cheese; classic lard biscuits with a orange blossom honey lard spread and griebenschmalz; and, tallow fried sweet potato fries with an avocado oil mayo with fermented hot sauce.
In addition to sharing his dishes, he got to explain the wonderful taste and health benefits of cooking with lard and beef tallow — just like how grandma used to cook. Fat is back baby!
